Spice vocabulary becomes easier when you notice which part of the plant is being used and what the spice contributes to a dish. Spices may come from seeds, berries, bark, flower buds, pods, roots, rhizomes, or dried leaves. Some add warmth and sweetness to baking, while others contribute earthiness, smoke, bitterness, sourness, color, or heat. A few create sensations that ordinary โ€œspicyโ€ vocabulary does not describe well, such as the numbing tingle of Sichuan pepper. You will also see important cooking verbs such as toast, crack, grind, grate, crush, steep, bloom, temper, and infuse.
