Fermentation happens when microorganisms such as bacteria, yeasts, or molds transform food. Depending on the food and the microbes involved, fermentation can create acidity, bubbles, alcohol, savory flavor, aroma, or changes in texture. Yogurt becomes thick and tart, sourdough dough rises, soybeans become miso or tempeh, and rice can become sake or makgeolli. Fermentation is not the same as simply adding acid: cabbage made sour with vinegar is pickled, while sauerkraut becomes sour because microorganisms produce acid during fermentation.
