๐Ÿซ™ Fermented Vocab

Fermentation is what living microbes do to food as they transform it. They can sour milk, raise dough, turn soybeans into savory pastes, and make drinks naturally fizzy. Vinegar pickles are different: their sourness comes from added vinegar, not fermentation. The foods below get their sour, savory, tangy, or lightly alcoholic character from bacteria, yeasts, and other microbes doing their work.
